Frederic Comyn, former basketball player and ‘king of the croissant’ won first prize for the best butter croissant in Paris in 2021 and best baguette in 2022.
Frederic Comyn’s grandparents were bakers in the Oise and little Fred helped them roll the croissants. Now, at 43 years of age, he owns three bakeries in Paris with 100 employees and is the official supplier of the presidential baguette.
At 19, he first worked in a pizzeria when he couldn’t find a master apprentice. The following year he found a mentor, before working with another mentor, Laurent Vuyge, for two years. ‘Any experience is good to take,’ he says. At 24, he joined a bakery and became the manager, before opening his own business.
